Mahogany Pork Roast

Ingredients:
1 cup Heinz Tomato Ketchup
3/4 cup (175 mL) Soy sauce
1/4 cup (50 mL) Finely chopped green onions
3 tbsp (45 mL) Minced fresh ginger
2 tbsp (30 mL) Toasted sesame or vegetable oil
4 Cloves garlic, minced
1 Pork shoulder butt roast, about 3 lb
1 tsp (5 mL) Each salt and pepper
1 tsp (5 mL) Sesame seeds (optional)

Directions:
Preparation:
Blend the ketchup with the soy sauce, onions, ginger,
sesame oil and garlic. Place roast in a large bowl and
pour over ketchup mixture. Turn to coat. Marinate for
at least 1 hour or overnight.
Preheat the oven to 375 F (190 C). Remove the roast
from the marinade. Reserve marinade. Sprinkle roast
evenly with salt and pepper. Place on a rack in a
shallow roasting pan. Roast for 1 hour.
Boil leftover marinade and simmer for 5 minutes.
Brush all over pork and continue to roast, basting
frequently with boiled marinade, for 45 to 60 minutes
or until an instant read thermometer registers 160 F
(70 C) when inserted into centre of meat. Broil for 5
minutes. Sprinkle with sesame seeds (if using) and
rest for 10 minutes before slicing. Makes 8 servings.

recipe.

marinade on pork ribs, chops or tenderloin
as well.

solution, try adding thinly sliced leftover
mahogany pork to stir-fries or fried rice.
