Pepperoni Lasagna

Ingredients:
1 ½ lb. ground beef
2 c. shredded Mozzarella cheese
1 pkg. (3 ½ oz.) sliced pepperoni
8 lasagna noodles, cooked and drained
½ c. sour cream
1 ½ c. cottage cheese
2 eggs
1/8 t. garlic powder
1 t. salt
1 t. Italian seasoning
1 T. dried parsley flakes
1 t. beef bouillon
1 can (6 oz.) tomato paste
1 can (8 oz.) tomato sauce
1 c. water
1 onion, chopped
½ c. Parmesan cheese

Directions:
Preheat oven to 350̊. In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain off fat. Add water, tomato sauce, tomato paste, bouillon and seasonings. Bring to a boil. Reduce heat; simmer, on medium heat, uncovered for 20 minutes. In a bowl, combine eggs, cottage cheese and sour cream.

TO ASSEMBLE: Spread ½ cup of the meat sauce into greased 13x9" baking dish. Layer with four noodles, the cottage cheese mixture and pepperoni. Top with remaining noodles and meat sauce. Sprinkle with mozzarella and Parmesan cheese. Cover and bake for 30-35 minutes. Uncover and bake 10 minutes longer or until heated through. Let stand 15 minutes before cutting.
