Ingredients: ===== DOUGH ===== 1 pkg. dry yeast ½ t. honey ½ c. water 4 c. flour 2 T. olive oil ===== TOPPING ===== 1 T. olive oil 1/4 t. salt 1 lb. shredded Mozzarella cheese 1 dash dried basil 1 dash dried oregano 2 T. grated Parmesan cheese 1 dash pepper 1 dash salt 1 can (5 oz.) tomato paste 1 can (14 oz.) crushed tomatoes 1/8 t. garlic powder 1 pkg. (3 oz.) sliced pepperoni, cut into thin strips
Directions: FOR SAUCE: Place all ingredients, except mozzarella cheese, in a saucepan and bring to a boil; lower heat and simmer sauce on low for about 2 hours or until sauce is thickened. Let cool to room temperature (hot sauce will make the dough soggy).
FOR DOUGH: In a mixing bowl, dissolve yeast with honey and ½ cup water; let stand 10 minutes. Put the flour in another mixing bowl; stir in oil, water and yeast mixture and mix thoroughly. Turn dough out onto a lightly floured surface and knead for 8 to 10 minutes. Let dough rise for 1 hour until doubled. Punch dough down an roll out on a floured surface to a 12x16" rectangle. Cut large rectangle into 8 smaller rectangles, each about 4x6"; set aside.
FOR ROLLS: Place a small amount of sauce on the dough rectangles, spreading it to cover the entire piece of dough. Sprinkle Mozzarella cheese and pepperoni over one side of each piece of dough. Roll up dough, burrito-style, sealing edges with moistened fingers. Place rolls on a lightly greased cookie sheet. Allow to rest for 10 minutes. Preheat oven to 500̊. Bake rolls until dough is golden brown, about 15 minutes. Serve roll with a side bowl of remaining pizza sauce for dipping. (NOTE: These freeze beautifully. When ready to eat, just put one in the microwave and cook for 2-3 minutes).
