Tunnel of Fudge Cake

Ingredients:
1 3/4 c. butter, softened
2 c. icing sugar
1 1/3 c. sugar
2 1/4 c. flour
3 eggs
3/4 c. cocoa powder
3 T. mayonnaise
2 c. chopped pecans or walnuts

Directions:
Preheat oven to 350°. In a large bowl, combine butter and sugar and beat until mixture is light and fluffy. Add eggs, one at a time, beating thoroughly after each addition until eggs combine with butter, then thoroughly mix in the mayonnaise. Gradually add icing sugar, mixing well. By hand, stir in flour, cocoa powder and pecans until well blended. Spray a Bundt pan with nonstick cooking spray and dust pan lightly with flour. Spoon batter into prepared pan. Bake for 55-60 minutes, until top looks dry and shiny (traditional doneness test won’t work, because of the soft fudge center). Cool cake in pan on wire rack for 1 hour, then invert onto serving plate and cool completely.
