Ingredients:
1 c. sugar
2 c. sugar
1 t. ground ginger
3/4 t. salt
½ c. hot water
3 t. baking soda
1 t. cinnamon
5 ½ c. flour
2 eggs
1 c. shortening
===== FROSTING =====
1 envelope unflavored gelatin
½ c. cold water
1 c. brown sugar
3/4 c. water

Directions:
In a large bowl, combine sugars, shortening and eggs; add dry ingredients alternately with the hot water and mix well. Chill dough for 3 to 4 hours. Meanwhile, prepare frosting. Put unflavored gelatin in a small bowl. Add the ½ cup cold water to soften; set aside. In a saucepan, add the sugar and the 3/4 cup water; bring to a boil, then lower heat and, using a candy thermometer, cook (stirring often to prevent burning) until thermometer reaches 210̊F; stir in softened gelatin. Let cool completely, then beat with electric mixer until it reaches spreading consistency (it will be thick and creamy like an egg white icing).

Preheat oven to 350̊. Roll out cookie dough to 1/4" thickness and cut with cookie cutters (to make them in their original shape, cut dough with a clean SPAM luncheon meat lid). Bake for 8 to 10 minutes; move to cooling racks. When cookies are completely cooled, frost with frosting. Leave cookies out on the counter until frosting dries (this will take an hour or so).
