Kentuckian Stack Apple Cake

Ingredients:
3/4 c. shortening
3 c. applesauce
1 c. milk
1 t. ground ginger
1 t. salt
½ t. baking soda
4 c. flour
3 eggs
1 c. molasses
1 c. sugar
Ground cinnamon, for sprinkling

Directions:
Preheat oven to 375°. Grease and flour six 9" round cake pans; set aside. In a mixing bowl, cream shortening; gradually add sugar and molasses, beating until smooth. Add eggs, one at a time, beating well after each addition. In another bowl, combine the flour, baking soda and ginger; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Beat well after each addition. Spoon 1 cup of batter into each prepared cake pan. Bake for 15 to 18 minutes or until a wooden pick inserted in the center comes out clean (watch cakes carefully, so they don’t burn). Carefully remove cake layers and place on cooling racks.

TO LAYER CAKE: Place one cake on a platter; spread about ½ cup of applesauce on cake; repeat with remaining cakes and applesauce. Sprinkle top of cake with cinnamon; cover cake securely with plastic wrap and refrigerate overnight.
